After 30 years of marriage, I finally learned how to cook some decent meals. If I had this cookbook from the beginning, maybe my husband wouldn't have gotten diabetes in the first place. The best thing about this cookbook is its explanation about diabetes. Even my husband didn't understand anything about his condition until he read this cookbook. Now I'm eating good too and enjoying it.
The recipes are very simple.

Frantically searching for easy, good tasting recipes for a newly diagnosed pre-diabetic picky-eating spouse. Recipes show all nutrition facts. Like the book. Recommend. Good price and high quality printing/includes pictures. I previewed @ library before purchasing and quickly bought a copy to keep.

While I don't cook for anyone with diabetes I know that they are usually lower in carbs then mainstream cookbooks so I usually pick up any that I see that look good. Also my daughter is a Diabetes Educator here in Minneapolis and one of my co-worker has diabetes, so I like to be a bit informed on the subject.

I like the format of this book, one page is the recipe with the facing page being a photo of the dish. It also has up in the upper corner the carb count for the recipe. I know that the higher the carb count the more I will need to modify the recipe (I have what my doctor calls a `food intolerance'.) I need to take out things like wheat, potatoes, corn or oatmeal.

I am thinking of replacing the bulgur in the recipe for Tomatoes Stuffed with Cucumber and Feta Cheese with chopped walnuts and I will probably add more parsley. Of course any recipe involving mangos has to be made, so the Mango-Lime Sorbet looks good. I am not sure why there are English muffin crumbs in the Asparagus with Shallots and Blue Cheese, I suppose they can add a bit of texture? Obviously when I make it there will be no muffin crumbs. I might add some sunflower seeds or other nuts to replace them though. What I do like is the use of fat-free chicken broth in the dressing.

There aren't very many recipes (it says 60) in this book and I am not sure that it would be worth paying the full retail price for it (I bought it used.) To me a cookbook dedicated to a certain way of eating with so few recipes should have recipes that stand out; they should have something that inspires you to change your thinking on what you are cooking or how you do it. I really don't see that in this book. I am not saying that the recipes are bad, but do they really stand out as recipes for people with diabetes? Are they teaching you anything different from what you already know or do?

Bottom line - Check it out at the library first. I would not recommend buying it unless it's really cheap, or you are totally desperate for a Diabetes cookbook and this is the only one available.

I love this book for the recipes and health benefits. I have purchased this book numerous times for friends as gifts. They love it too. Having dinner guest Sunday and looking forward to these response to the Chicken with Caramelized Onions.
