I loved this book so much that I have given it as gifts to friends. It's a great introduction to eating more raw food. However, even more than this book, I especially love this author's other book "Ani's Raw Food De-tox." It has literally changed my life. I lived on Nexium for 10 years due to serious reflux issues. In the course of trying Ani's 15-day raw food detox plan, I accidentally forgot to take my little purple pill and, to my surprise, no reflux. I have not taken it since (about 3 months). Also, chronic IBS has disappeared!!! And, best of all, my "elimination" has simply never been better. I can't believe it took me 59 years to figure out I just needed to eat more veggies and fruits (A LOT more), and this is simple the easiest and tastiest wat to do it!! I highly recommend this author's books!!

After being a vegetarian for 10+ years starting back in the early 70s, with Diet for a Small Planet and Cooking for a Small Planet as 2 of my daily go to books, I then graduated to macrobiotics, but slowly, over the course of 5 years (due to laziness and stress) went back to the Standard American Diet. As someone who is gluten, lactose and soy intolerant, the S.A.D. took a gradual, negative toll on my health, helped pack on excess pounds, aggravated my fibromyalgia and made it almost impossible to get over a simple head cold.

I went back to a dairy free high protein diet and began to feel better, but reached a point where I could not even think of meat, never mind cook it for 2-3 meals a day. I started investigating veganism and raw food and spent several hundred dollars and hours researching books.

Of everything I've read, this is one of my top 3 favorite books for theory, usuability, and good tasting recipes. I love Ms. Phyo's flexibility about eating warm foods when the need is appropriate, making substitutions and taking a lot of the mumbo jumbo out of eating raw. She expands the horizons so one is not just looking down a long dull future of nuts, salads, and smoothies.

While I am still eating some cooked foods, I am looking forward to being at least 95% raw by the end of this summer and I feel very confident that this book (along with 3 of her others) will aid me in achieving that goal.

Great book full of recipes easy to make with commonly available ingredients. I especially love the dips and sauces, that can be used to make a quick meal when dropped on salads. Great salads too. The desserts are very good too, and one can pick up ideas by leafing through the pages. As all Phyo's books, it has a very down-to-earth approach with suggestions to adapt recipes. My family does not folllow a raw food lifestyle, but we still get a lot from this book because it provides healthy substitutes to unhealthy foods (e.g. mayonnaise). The recipes are well presented and easy to follow, and the ingredients are healthy and easy to locate. I would recommend this book to anybody wishing to improve their diet and health.

Pros:

This books foods are incredibly delicious. I'm totally new to raw vegan food and I bought this book as a means to changing my diet around as best as I possibly can. Naturally I was scared that the recipies would be trying to hard to replicate the taste and textures of cheese or breads or anything else. Instead, they are their own textures and flavors and turn out to be very very enjoyable. Who'd have known you could make cheeses and milks and breads and crackers out of nuts and seeds? Not me!

Cons:

Roughly 80% of the recipies or more in this book requires the use of a dehydrator which will run you at LEAST $150 if you want to get the one that Ani recommends. It would be nice if there were enough reicipies for me to get by without having to buy a dehydrator but, hey, I'm glad I did.

I have so many raw food books, but at the end of the day this is my favorite. It's simple and straightforward and yummy! There are certain recipes in here my family requests over and over such as the crepes, banana ice kream (my favorite), spinach scramble, coconut bacon (my husband is crazy for that!), mock tuna salad and south of the border wraps. There are a fair amount of recipes in here that do not require a dehydrator, in case you don't have one. Some of those include all the soups, salads, lettuce wraps, desserts, kelp noodles, scrambles, pates, and lots more. I am occasionally 100% raw.. when I make recipes from this book (or any of Ani's) I end up feeling amazing by the end of the week. Within a month I fit into my favorite jeans perfectly, my energy is higher and I just feel happier overall. I'm sure that can be said with eating any kind of raw, but for some reason I always go back to Ani Phyo's book. Making her recipes help me get to where I want to be physically and emotionally. I just find it easier sticking to raw with her books. I also love "Ani's Raw Food Kitchen".. lots of amazing recipes in there!

In the six months or so that I've been raw the major challenge has been finding recipes that produce edible results. Too often I end up with something that is just ... well, hideous.

Ani Phyo's Raw Food Essentials to the rescue! I have made several recipes from this book and they have all been SCRUMPTIOUS! I just finished eating a chicken-less burger on zucchini bread with Aioli mayo - to die for! Slap some lettuce and tomato on that bad boy and you will be in heaven. Her breads taste, smell and crumb like bread. Her pizza crusts are the best in the business. These are the works of a master chef. I feel like Elaine felt on Seinfeld when she found the soup Nazi's secret soup recipes - these recipes are worth their weight in gold!!!

GET THIS BOOK. You won't regret it.

I was disappointed to find that most of the pictures were in black and white, which made the food look unappealing/drab. I have 2 of her other books and the recipes are delicious. I just think for someone who is just starting to dabble in the raw food diet scene, they need to be inspired with beautiful/appetizing pictures. I will continue my quest to be healthy and eat well...just not with this book that appears to be more like a textbook then a beautifully thought out recipe book.
