Spread evenly over the top and sides of the cake with a palette knife. She knows what she’s talking about. For a snow-peak effect, use a smaller palette knife to rough up the icing. Leave the cake loosely covered overnight for the icing to harden a little, then wrap or store in an airtight container in a cool place until needed. If you like, you can replace half of the glacé cherries with dried apricots. You can also replace up to 75g of the currants with mixed candied peel.

I had heard about this book when I was researching a recipe from a blog and was anxious to order a copy for myself. Definitely a good read however I haven't tried any recipes yet since they call for some items that are a bit pricey and hard to obtain. Still I found it well worth adding to my enormous recipe book collection!

Bought this for a friend's birthday - it has long be our bible for cakes for birthdays, school baking and generally when it would be nice to have a cake around. Which is most of the time It covers loads of styles and the recipes work.

Mary Berry is a wonderful baker. She is self-assured and exudes confidence without looking down her nose at her readers. Not an easy feat.

One has the feeling that a friend, or Cake Fairy, has entered the kitchen and will guide the baker through all sorts of things which might appear difficult but are in fact quite easily accomplished. Mary Berry should be at the side of every baker. World results would be far better with Mary's wand waving over the ovens.

And she is thoughtful enough to print US and European measurements.
Lovely clear recipes. A marvelous variety of cakes, ranging from simple to intricate. Every one I've tried has been delicious.
